Ingredients
  • 4 eggs
  • 2 whole wheat pitas
  • 1 tablespoon butter
  • pepper for seasoning
  • handful of washed kale
  • 1 tablespoon milk
Instructions
  1. Heat the two pitas in the oven while you start cooking.
  2. Place 1 teaspoon of butter in a frying pan.
  3. Pan fry can on medium to high heat for a few minutes until it turns a vibrant green.
  4. Once the kale is cooked, set aside.
  5. Mix eggs and milk in a bowl. Add seasoning.
  6. Place another teaspoon of butter in the pan for frying and cook eggs.
  7. Remove pitas from oven and line then with remaining butter.
  8. Fill pitas with kale and eggs.
  9. Enjoy!

  • honey (optional)
Instructions
  1. Combine all ingredients in a blender and blend until smooth.
  2. I blended half of the ingredients at a time.

  • 1 1/3 cup whole wheat flour
  • 1 t baking powder
  • 1/4 teaspoon salt
  • 1/3 cup sugar
  • 2 eggs
  • 2 Tablespoon melted butter
  • 1 teaspoon vanilla extract
  • 3 bananas, mashed
  • 1 cup cooked quinoa
Instructions
  1. Preheat the oven to 350°.
  2. In a large bowl mix sugar, butter, eggs, and vanilla.
  3. Next mix in the flour, baking powder and salt.
  4. After everything has been all mixed add in the mashed bananas and quinoa.
  5. Line your muffin tin with cupcake wrappers.
  6. Spoon batter into muffin tin, filling 2/3 of the way.
  7. Bake for 25 minutes, until a fork comes out clean.

Ingredients
  • 2 cups whole wheat-flour
  • 1/2 teaspoon salt
  • 1 cup unsalted butter
  • 1/2 cup water
  • 2 teaspoons of sugar
  • 6 apples washed and chopped into pieces<a
  • 6 nectarines washed and chopped into pieces
  • 4 tablespoons of butter
  • 1/4 of a cup of water
  • cinnamon – for sprinkling
Instructions
  1. For the crust:
  2. In a bowl combine flour, salt, and butter until the mixture is crumby.
  3. Next add in water until a ball is formed.
  4. Divide the ball in half and refrigerate for at least 2 hours.
  5. For the Pie:
  6. Preheat the oven to 350 degrees.
  7. Roll out your pie crusts and place them in your pie dishes.
  8. Place chopped apples and nectarines into their own respective pie dishes.
  9. Add 2 TB of butter to each pie
  10. Pour half of the 1/2 of water on each pie.
  11. Sprinkle the top of the apple pie with cinnamon.
  12. Bake for 50-60 minutes, until the crust is fully cooked.

Savory lasagna with Italian cheese, turkey, and fresh tomato sauce.
Ingredients
  • 1lb ground turkey
  • 4 – 5 cups of fresh tomato sauce
  • 32 oz container of part-skim ricotta
  • 2 cups (8 oz) shredded mozzarella
  • 1/2 cup grated Parmesan cheese
  • 2 eggs
  • 1 teaspoon dried oregano
  • 1 chopped onion
  • 1/4 tsp ground black pepper
  • 1 box of whole wheat lasagna
Instructions
  1. Heat oven to 350 degrees.
  2. Boil lasagna according to the box.
  3. In a medium pan, brown the turkey and add in the chopped onion.
  4. While the lasagna cooks and the turkey browns, in a large bowl combine ricotta, eggs, spices, half of the mozzarella.
  5. Pour 1 cup of sauce on the bottom of your large baking dish.
  6. Next add a layer of lasagna.
  7. Add a thin coat of sauce on top of the lasagna.
  8. Spread out a layer of ground turkey.
  9. Sprinkle mozzarella on top of the turkey.
  10. Next add a layer or lasagna noodles and add a layer of the ricotta mixture on top of that.
  11. Repeat meat and ricotta layers until you run out.
  12. Top with any remaining mozzarella and tomato sauce.
  13. Bake for 45 minutes

  • 1 can of chick peas (19 oz)
  • 1/2 teaspoon sea salt
  • 1/2 teaspoon pepper
  • 1 clove garlic
  • 4 tablespoons lemon juice
  • 2 tablespoons tahini
  • 2 tablespoons olive oil
Instructions
  1. Drain the chickpea can and drain the liquid.
  2. Place all ingredients in the blender.
  3. Blend until smooth.
  4. Serve with warm pita

Ingredients
  • Crust
  • 1/2 cup unsalted butter softened
  • 1/4 cup white sugar
  • 1/4 teaspoon vanilla
  • 1 cup whole wheat flour
  • Filling
  • 1/4 cup white sugar
  • 1 cup water
  • 1 (9 oz) dried figs (rehydrated)
  • Topping
  • 1/4 cup whole wheat flour
  • 3 tablespoons unsalted butter
  • 1/4 cup uncooked oats
  • 1/4 cup sliced almonds
Instructions
  1. Let the figs soak overnight in a bowl of water.
  2. Preheat oven to 350 degrees and grease 9 inch cake pan.
  3. To make the crust, in a small bowl mix all of the “crust” ingredients above together.
  4. Press the crust into the 9in cake pan
  5. For the filling, in a large skillet combine filling ingredients over a medium heat.
  6. Frequently stir fig. Cook for 5-10 minutes until the figs absorb most of the water.
  7. Pour fig mixture on top of the crust in the cake pan.
  8. In a small bowl mix together the topping ingredients.
  9. Spread the topping ingredients over the fig mixture.
  10. Bake 20-25 minutes until the golden brown
